    Choosing a Banneton Proofing Basket

    A banneton supports your shaped dough during its final proof before baking. It helps the loaf hold its shape, while an unlined rattan basket can leave a distinctive flour-dusted pattern on the surface. The dough is then transferred to a suitable baking vessel—the basket itself does not go in the oven.


    Round or Oval?

    Round proofing baskets suit round loaves, known as boules. Oval baskets suit longer loaves, called batards. If you enjoy baking both, a mixed basket kit gives you options for different bake days.

    Choose a basket that suits your usual dough quantity and the shape and size of your Dutch oven or other baking vessel. Check the dimensions in each listing before purchasing.

    Should I Use a Basket Liner?

    A liner gives your loaf a smoother surface, while using a floured basket without a liner allows the rattan pattern to show. Both approaches need suitable flouring to help the dough release.

    How Do I Care for a Rattan Banneton?

    Let your basket dry thoroughly after use, then brush away loose flour and dried dough. Avoid soaking it or putting it in the dishwasher, and store it somewhere dry with good airflow.
