Finding the Right Proofing Basket

A banneton proofing basket supports your shaped sourdough during its final proof. When the dough is ready, you turn it out and transfer it to a Dutch oven or another suitable baking surface. The basket is for proofing only—it does not go in the oven.


Which Shape Should I Choose?

Choose a round basket for round loaves, known as boules, or an oval basket for longer loaves, called batards. Speciality shapes offer another way to experiment with your bread.

Match the basket to the loaf you want to make and the baking vessel you plan to use.


What Size Basket Do I Need?

Check the dimensions and any dough-weight guidance in the individual listing. Your basket needs room for the dough to expand during proofing, and the resulting loaf should fit comfortably inside your baking vessel.

If you’re unsure, tell us your usual recipe quantity and what you bake in—we’re happy to help you choose.


Should I Use a Liner?

A floured liner gives the loaf a smoother surface. Using a rattan basket without a liner allows its characteristic pattern to show on the dough.

Both methods need suitable flouring to help release the loaf. Check the product listing to see whether a liner is included with your chosen basket.


How Do I Care for My Banneton?

After use, let the basket dry thoroughly, then brush out loose flour and dried dough. Avoid soaking rattan baskets or putting them in the dishwasher, and store them somewhere dry with good airflow.

Following the care instructions for your basket will help keep it ready for future bake days.
